The Best Homemade Biscotti's

My mom gave me this recipe for biscotti's a while ago. She's made them before, and they fly off the tray like they have wings.




Almond Cappuccino Biscotti Recipe

Ingredients:
2 cups flour
3 tablespoons General Foods International instant cappuccino (I used Irish Creme flavor)
1 1/2 teaspoons baking powder
1/2 cup butter (1 stick), softened
3/4 cups sugar
2 eggs
1 teaspoon of vanilla or almond extract (I used almond. Lemon or coconut would also be good)
1/2 cup sliced almonds

Preheat oven to 325.
Mix together flour, cappuccino, and baking powder, and set aside.
Combine butter, sugar, eggs, and almond extract.
Gradually beat in flour mixture. Once combined, add nuts and incorporate.
Divide dough in two equal parts, and shape into two, 14-inch flat loaves, approximately 3/4-1 inch thick. Bake for 22 minutes or until light brown.
Remove from oven, and slice diagonally into about 3/4-inch slices.
Place back on the tray with some space between the slices. Bake for 5 more minutes to make them slightly crunchy.

Allow to cool, and pair with hot chocolate, tea, milk, or your other favorite beverage!

I think Santa's going to get a plate of these this year!
