SPAGHETTI SQUASH RECIPE







Spaghetti squash with meat sauce, and a frothy glass of chocolate milk for dessert! Spaghetti squash is a cheat food. It tastes buttery and amazing, and you feel like you're eating pasta, but it's a veggie. RAH for cutting carbs! I had a wonderfully productive day, full of homework and cleaning and going on a brisk trail walk in which my buns burned straight to you-know-where. And I didn't wear a speck of makeup, so forgive my dastardly appearance. 

Here's the ridiculously easy recipe for the spaghetti squash.

1 spaghetti squash for 2 adults 

Cut in half through the stem, salt and pepper generously, and roast open-faced in a 375 oven for 1.5 hours or until soft and you're able to easily scrape the "spaghetti" off the sides. It takes a long time, but throw a movie on and do the dishes, and you're husband will be super impressed that you made dinner and cleaned. 

Serve with meat sauce, marinara, pesto, butter and cheese, or your favorite pasta topping. It's awesome with pesto and parmesan, and even more awesome with homemade meat sauce.

Homemade meat sauce:
1 lb ground beef or turkey (we like it with a lot of meat. if you like it more saucy, use less meat)
salt, pepper, seasoned salt
store-bought pasta sauce
1Tbsp sugar

Brown the meat in a large skillet with salt and pepper. Drain and return to pan. Add pasta sauce until it is at desired thickness. Add 1 Tbsp sugar, simmer for a few minutes, and serve! Top with parmesan. Always. 

It's fun for presentation's sake to put the sauce in the squash, but it's hard to eat that way. Dump the sauce onto the plate and scrape the squash out. It's super delicious.

    1. Haha, I think my mom has totally been converted to it and makes it all the time now. It IS delicious, I took leftovers to work.
